Writing this post for a friend who wants to do a Tea party with an "Around the World" theme, and since she got Indian, I suggested our very own evergreen snack "Samosa". Popularized by Bollywood as well in Akshay Kumar and Juhi's "Jab tak rahega Samose me aaloo", its the most popular Indian tea time snack which is savory and made with a potato and peas filling. There are several variations, and some also add peanuts for that added crunch. I will add a photo when I make some again. Google "Samosa" for sample images :)
Ingredients, serves 5, 2 per person -
1) Potatoes - 3, peeled and cut in half
2) Peas - 1 cup
3) All purpose flour - 2 cups
4) Oil for deep frying
5) Turmeric - 1/2 tsp
6) Salt - as per taste
7) Cumin seeds - 1 tsp
8) Cilantro
9) Ginger - 1 Tsp, grated
Method -
1) Heat some water with salt and boil the potato halves until soft.
Dough
2) In the meantime, make dough with the flour. To make dough, add a pinch of Salt to the AP flour.
3) Add 3 Tsp vegetable oil to the flour and mix well.
4) Add water in small quantities and make a dough. The dough should be on the drier side.
5) Keep aside after covering with a wet kitchen towel.
Filling
7) Once the potatoes have boiled, drain them
8) In a non stick pan, add 1 Tsp oil
9) Add the cumin seeds and sputter up
10) Add the ginger, peas, turmeric and salt and saute for 1-2 minutes
11) Add the boiled potatoes and mash them with the seasoning.
12) Once the potatoes are smashed, turn off flame and add the cilantro and mix in. Do not make a paste with the potatoes, there will be some small pieces here and there and thats perfect. The filling will be dry.
13) Heat oil for frying.
14) Make small balls out of the dough.
15) Roll a ball, you might need to dip it in some flour before you roll to prevent it from sticking.
16) Make a small tortilla and cut the tortilla in half.
18) In your palms roll the half to form a 3-D cone. With a spoon, add about a spoonful of filling into the cone, don't worry if your cone is larger or smaller, adjust filling accordingly.
19) With your fingers, press and close the sides.
20) Make a batch and deep fry until crispy golden brown on both sides.
Congratulations! You made your first batch of samosa. Serve hot with some ketchup.
tip - if you have shortage of time, buy some readymade puff pastry dough, roll it with some flour and use a bowl to cut out circles, which you can then cut in half
